Warmer weather calls for simple, and cool, recipes. White BBQ Pulled Chicken Sandwiches fit that perfectly. What is white barbecue? It’s a mayonnaise-based sauce from Alabama. But it doesn’t taste like mayonnaise. It adds flavor and moisture and is something completely different from what you expect in a barbecue sauce. These sandwiches use shredded rotisserie chicken, so there’s no need to heat up the kitchen. My favorite thing about this recipe? If you have any leftovers, toss the chicken and the sauce with cooked pasta for a completely different meal.
White BBQ Pulled Chicken Sandwich
- 2 cups cooked chicken, shredded
- 6 hamburger buns (I prefer sturdier, Kaiser rolls)
- 6 slices of bacon, cooked and coarsely chopped
- 1 (16 oz) package of coleslaw mix
White BBQ Sauce:
- 1 cup mayonnaise
- ½ distilled white vinegar
- ¼ cup apple juice
- 1-3 teaspoons prepared horseradish
- 1 teaspoon coarse ground pepper
- 1 teaspoon lemon juice
- ½ teaspoon salt
- ¼-½ teaspoon cayenne pepper
- ½ teaspoon dark brown sugar
- In large bowl, toss shredded chicken with bacon and 1/3 cup of white BBQ sauce. Add more sauce, to taste, but you do not want the chicken to be too wet.
- Place a serving of chicken mixture on bottom of buns and top with the dry coleslaw mixture.
- Serve with extra sauce on the side, for adding to the sandwiches to taste.
(Leftovers are delicious tossed with cooked pasta. It might even be better than the sandwich!)
