A new year and another new soup recipe. Because who doesn’t want a bowl of melted cheese topped with more melted cheese?! Topping the soup with the nachos makes for a fun presentation. Be sure to have enough nachos on hand so you can replace them as you eat them. I recommend taking the time to grate the cheese yourself, especially for the soup. The packaged cheese won’t melt as nicely. The nice thing about this soup is that everyone can customize it to their taste, so everyone is happy. Happy New Year!
- 1 pound ground beef or turkey
- 1 (1.25 oz.) package of taco seasoning
- 1 can (15 oz.) black beans, drained and rinsed
- 1 cup canned corn, drained
- 1 cup salsa (your preferred level of heat)
- 4 Tablespoons (1/2 a stick) of butter
- ¼ cup all-purpose flour
- 3 cups chicken broth
- 3 cups milk
- 16 ounces cheddar cheese, grated
- Additional toppings, as desired (diced tomatoes, chopped avocado, cilantro, sliced jalapeños, etc.)
Nacho Garnish:
- 4 cups tortilla chips
- 1 ½ cups grated cheddar cheese
- In a large skillet, brown the ground beef or turkey over medium-high heat. Drain any excess fat.
- Reduce the heat to low, sprinkle the taco seasoning into the meat and stir to combine. Stir in the beans, corn, and salsa and continue to cook until warmed through. Cover the skillet and remove from the heat.
- In a 3-4 quart Dutch oven or pot, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. While whisking constantly, pour the chicken broth into the pan slowly until combined and smooth. Continue whisking and slowly add the milk. Bring this mixture just to a boil, stirring constantly
- Reduce the heat to low and whisk in the cheddar cheese, stirring until melted and smooth. Add the beef mixture to the soup, stirring to combine. Cover the pot and keep warm while you prepare the Nacho Garnish.
- Preheat the oven to 400°F.
- Spread the tortilla chips on a baking sheet and top with the cheddar cheese. Bake for 5 minutes or until the cheese is melted.
- Serve the soup in bowls topped with the nachos.
