Baked Oatmeal

I view most recipes as guidelines on how to make something. This is one of my favorite recipes, because it’s merely a suggestion of what you can do with baked oatmeal. The basic ingredients are there, but it is perfect to customize to your tastes. I’m including three options my family enjoys, Lemon Blueberry, Apple Cinnamon, and Chocolate Peanut Butter. Please, mix it up and make it your own!

Lemon Blueberry Baked Oatmeal

  • ½ cup butter, softened
  • ½ cup sugar
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • ¼ cup lemon juice
  • Zest from 2 lemons
  • 3 cups old-fashioned oats
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk (whatever kind you would like to use)
  • 1 ½ cups blueberries, fresh or frozen
  1. Preheat oven to 375°F.  Spray an 8×8-inch pan with cooking spray and set aside.
  2. In large bowl, stir together butter and sugar.  Add eggs, vanilla, lemon juice, and lemon zest and mix well.
  3. Stir in oats, baking powder, and salt to combine.  Add milk and blueberries.
  4. Pour into greased pan and bake for 30-40 minutes, until the top is nicely browned and center is set.  Remove from oven and let cool for 5-10 minutes before serving.  

Can be topped with additional blueberries, fresh lemon zest, yogurt, or syrup.

Serves 6.

Apple Cinnamon Baked Oatmeal  

  • 1/2 cup butter, softened
  • 1/2 cup packed brown sugar
  • 2 eggs, beaten
  • 1 teaspoon vanilla
  • 3 cups old-fashioned oats
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1-2 teaspoons cinnamon (or to taste)
  • 1-2 medium apples, peeled and chopped
  • 1 cup milk
  1. Preheat oven to 350°F.  Grease an 8×8-inch baking dish.
  2. In large bowl, stir together softened butter and brown sugar; add eggs and vanilla and mix well.  Stir in remaining ingredients.  Pour into greased dish.  Bake for 30 minutes or until golden brown and set.  

Serves 4-6.

I like this with maple syrup drizzled on top.  Will keep in fridge for several days, making a great breakfast for busy days.

Chocolate Peanut Butter Baked Oatmeal

  • 1/2 cup butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup packed brown sugar
  • 2 eggs, beaten
  • 1 teaspoon vanilla
  • 3 cups old-fashioned oats
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 cup mini chocolate chips
  • 1 cup milk
  1. Preheat oven to 350°F.  Grease an 8×8-inch baking dish.
  2. In large bowl, stir together softened butter and brown sugar; add eggs and vanilla and mix well.  Stir in remaining ingredients.  Pour into greased dish.  Bake for 30 minutes or until golden brown and set.  

Serves 4-6.
